Swiss Muesli (Serves 2)
2 teaspoons lemon juice 
½ cup low fat milk 
1 apple, cored and grated 
1 cup rolled oats 
2 tablespoons slivered almonds 
2 teaspoons honey 
½ cup low fat vanilla yoghurt 

Soak oats and milk overnight keep refrigerated. 
Next morning add remaining ingredients.


Orange Bran Muffins
2 teaspoons finely grated orange rind 
1 cup All Bran 
¾ cup orange juice 
2 eggs, beaten 
2 teaspoons baking powder 
2 tablespoons brown sugar 
½ cup raisins 
1 cup wholemeal flour 
½ cup plain flour 

Combine all ingredients, stirring until just mixed. 
Pour into greased muffin pans. 
Bake in a moderate oven for 20-25 minutes.


Dried Fruit Delight (Serves 4)
1 teaspoon honey
1 teaspoon finely grated lemon rind
½ cup seeded prunes
½ cup dried apples
piece cinnamon stick
½ cup dried apricots
200g carton natural low fat yoghurt
¼ cup raisins
1 cup orange juice

The night before: Add honey and rind to yoghurt.
Combine, fruit, juice and cinnamon stick, refrigerate until morning.
Next morning remove cinnamon stick.
Serve fruit in stemmed glasses (or use bowl) and top with yoghurt.
